Vegetable Soup


1 large onion (medium dice)

2 stalks celery (medium dice)

2 carrots (medium dice) 

4 garlic cloves (finely chopped)

2 medium zucchini (medium dice)

2 yellow summer squash (medium dice)

1 large tomato (peeled & seeded, medium dice)

8 cups low-sodium chicken stock

2 boneless skinless chicken breasts (cooked & cubed), optional


In large enough pot heat small amount of olive oil over medium heat. Add onions, carrots, and celery and saute until slightly translucent. Add garlic and cook 1 minute more. Pour stock into pot and bring to a boil, reduce and simmer 8-10 minutes. Add zucchini, squash, and tomato to pot and continue to simmer until tender, approx. 10-15 minutes. At this point chicken may be added. Add salt and pepper to taste. Note: any vegetables desired can be added or substitued to soup

Smokey Turkey Burgers


1lb lean ground turkey

1 egg white

2tbls fresh cilantro (finely chopped)

1 garlic clove (minced)

2tbls smokey bbq sauce

salt & pepper, to taste


In a bowl combine ground turkey, egg white, cilantro, garlic, bbq sauce, and salt & pepper. Mix well and form into 4 even patties. Lightly brush the patties with olive oil before placing in grill pan or outdoor grill. Cook approximately 5-6 minutes per side, until no longer pink.

These burgers are best served on a whole wheat bun topped with thinly sliced red onion and butter lettuce. Accompanied with extra bbq sauce. Enjoy!
